Fococcia Pugliese rosemary potato bread; with smoked, fried capers, seeds, horseradish, and a sip of beet veloute.

White Fig Carpaccio with french breakfast radish, asian pear, whipped cashew, and elderflower mignonette.

Fairytale Eggplant charcoal-grilled and glazed with hoisin; caponata, and eggplant mousse.

Tortelloni filled with celeriac and spinach; with broccoli rabe and white beans in a buttery loveage sauce.

Stuffed Carnival Squash with creamy carnaroli rice, chanterelles, pumpkin shoots, and black garlic.  

Gateau Tatin with honeycrisp apple, amaro caramel, candied pecans and thyme pastry crème.
